Eating Chorizo

I have eaten small portions of chorizo in tapas bar .However,recently bought a complete sausage at a market and ate some slices off it.Found it tough to eat with the skin on. Are you allowed to eat a chorizo with the skin on? What is the skin made of?

Some say peel the skin of.

Some say okay to eat the skin.

Some say it's made of plastic.

Some say it's made of paper.

Some say if it's got staples either end then peel it.

Some say it's made of the same stuff as UK sausages are made from.

Some say it's made of every part of the pig.

Some say shoulder of the pig.

I would say if you find it hard to eat with the skin on then that one has been made out of an old coke bottle, or left over miners boots.

Just hope it's not made of the same stuff, and in the same way as Sav's are made.

Ok this is a good question and it depends on what chorizo you bought. If it was hand made and is from a small producer it will more than likely be a natural "skin" made from intestine or even stomach from a pig, sheep,cow and occasionally a horse. But traditional producers will use pigs intestine. This you can tell because it is thick and tough due to the curing process and is almost always removed unless you are a savage carnivore. It adds no flavour to the chorizo, just holds it in place during the curing process and protects it from the elements. So remove it. The problems come from the mass produced chorizos, white brand chorizos and cheaper brands etc It is far too expensive to use natural skins so they use artificial skins made out of cellulose, a natural product but not skin. You can easily identify these ones as they are a pain to take off and break constantly. Thats why a lot of people don't even bother. Its so thin you don't even notice it really, its more like eating paper, it won't harm you but will not add to the flavour. So my best advice is to remove it always, the majority of people do. If anything it detracts from the flavour. Hope this helps clear things up.
