A Spanish Dish To Include In Your Christmas Menu

For many different nationalities the lunches and dinners eaten during the Christmas period are the most important of the year and often their preparation begins weeks in advance.

Here we present a very typical Spanish Christmas dish which will give a Mediterranean flavour to your Christmas menu.

Special Christmas Besugo (Sea Bream)

Ingredients:

- 1 kilo of sea bream (1 large fish or 1 per person)

- 4 cloves of crushed garlic

- 1 small glass of tinned chopped tomato (tomate triturado)

- 4 carrots

- 1 onion

- 3 large potatoes

- ˝ dessert spoon of cayenne pepper

- 4 sticks of celery

- Some fresh parsley

- 1 green pepper

- 1 lemon

- Oil

- Salt and pepper

Sea breamMethod:

1. Chop the carrots, potatoes and pepper into 1cm slices, the celery into 2 cm slices and the onion into rings.

2. Fry all the vegetables in a little oil and then leave them covered on a very low heat to sweat for 30 minutes. Remove with a slotted spoon and leaving the oil and juice.

3. Place the sea bream in a dish and cover with the cooked vegetables.

4. Fry the garlic in the same oil as the vegetables for approx. 1 minute and then add the chopped tomato, season with salt and pepper and a little cayenne pepper, stirring continuously for 3 minutes.

5. Add a glass of water and allow the sauce to come to the boil.

6. Pour the sauce onto the sea bream and the place it into a pre-heated oven at 200 degrees centigrade and cook for 30 minutes.

7. Serve the Besugo on top of the vegetables with a roasted whole tomato (optional) on top as decoration.
