This is my favourite guide to the walking routes in Spain: topwalks.net - Walking Routes in spain
It covers 200 routes in Asturias, Cantabria, Pyrenees (Aragon), Valencia and Andalusia. It is very thorough and comprehensive, highly recommended.

Yes the via verdes are great, nice and flat for bike riding or even pushchairs and wheelchairs. Around us in Jaen we have the Via Verde de Aceite.
