I know, an old chesnut! If one gives POA to a Lawyer to sell one property and move the monies around. Can this POA be cancelled after the event? Say, if we wanted to keep some money in Spain for a while but did not want that POA to continue.

Yes, just go back to the notary where you signed with your original passports and ask them to cancel it, very simple process.
