spanish reg. cars buying in U.K.

Hi Everyone, My partner and I will be returning to our house in Montroy near Valencia in September 2013. We have 2 choices in buying a Spanish Registered Car in England or If any one is travelling back to the U.K. we would be interested in buying their car privately.
We would like a car with a fairly large boot i.e. Fiat Doblo / Ford Galaxy / Skoda Roomster / Citreon Berlingo etc etc
Tax and ITV if possible please.
